Hm, I know you were trying to consider the player's normal view, but perhaps you could try out some more sketches, maybe a more scenic/panoramic view. I know that when MK races start, there's several nice shots of different parts of the course. If it doesn't work out, that's cool too.
Oh, one thing to consider - is this a beginner course, perhaps? Because I feel that the scene you've presented is suitable for such a map. If not, then maybe drawing out a skeleton of the whole course will help deciding where to add elements. I like the wood panel snowmen, it fits Mario's visual language; I'm not so sold on the star trees (are they trees?) because the trunks look cylindrical while the leaves look like planes. And if you draw like some really quick thumbnails (not to the detail you have here) of the entire map, it'll help when you cut down to a screen of the game.
